When your in a hurry then my speedy mac and cheese is just the ticket. For me I always like to have a few dishes that are easy, can be made quickly and finally one to please the family. Well what could be more crowd pleasing than the glorious mac and cheese.

To make this we essentially want to be getting the cheese sauce made in the time it takes to cook macaroni. According to most packets that I have at home the time seems to be between 11-13 mins. So many simple dishes can come together in just a few mins and a lot seem to feature cheese. Take the classic Cheese Toastie. Moments to make and pure delight to eat.

Anyways back to the mac and cheese, So I do have 2 ways to make this the speedy way which we have here and the next is from Gordon Ramsay. His mac and cheese from the bread street kitchen is world class. So speedy lunch we use this, Fine dining friends night lets go for up market mac.

Getting a Speedy Mac and Cheese Together

So to make this speedy mac and cheese you need to sort the following; 500ml milk, 4 tbsp plain flour, 50g butter, 100g grated strong cheddar (or 50g grated cheddar, 50g crumbled blue cheese). 75g macaroni per person.

How to Cook the Speedy Mac

Allow approximately 75g of pasta per person. This is what my packet of macaroni says so I am going to go with their advice. To be honest with you all following the guidelines on the packet for cooking the pasta is the best way. Ensuring the water is well salted you cant really go wrong. My packet says to Add the pasta to a large pan of boiling water, stir and return to the boil. Cook for 11-13 minutes, drain well and serve immediately. Or in this case mix with the cheese sauce and then serve.

How to make a Speedy cheese sauce:

Pour 500 ml milk into a large saucepan and add 4 tbsp plain flour and 50g butter.Turn on the heat to medium and start to whisk the mixture. Keep whisking fast as the butter melts and the mixture comes to the boil. The flour will disappear and the sauce will begin to thicken.

Whisk for another 2 mins while the sauce bubbles then stir in 100 g grated strong cheddar cheese (or 50 g grated cheddar, 50 g crumbled blue cheese) until melted.

Mixing Cheese Sauce And Macaroni:

Once the sauce is made and the pasta is cooked we simply need to mix the two by draining the pasta and then adding straight into the cheese sauce mix. Give a good stir and check for seasoning then serve. See it really is a super simple recipe this one.
