All About Banana Loaf
Banana bread loaf is a type of bread made from mashed bananas. It is often a moist, sweet, cake-like bread. However, there are some banana bread recipes that are traditional-style raised breads. Banana bread first became a standard feature of American cookbooks with the popularisation of baking soda and baking powder in the 1930s. National Banana Bread day is 23 February.
Featuring the cooks from Instagram is something I am super excited about. I want to be able to bring you as many recipes as possible to try out and also feature all of my awesome friends. In this series I am sharing the posts from Instagram and as with all our recipes the printable version features here too. Enjoy.

Banana Bread Loaf
- Reach for a slice go ahead. It’s Gluten free, refined sugar free, and vegan; minus the dark chocolate
- 2 cups GF Oat flour
- 1.5 tsp baking soda
- 1 tsp cinnamon powder
- ½ tsp salt
- 1 tsp vanilla
- ¼ cup maple syrup
- ⅓ cup coconut oil
- ⅓ cup almond butter
- 6½-7 mashed bananas
- ¼ cup pecans
- Preheat oven to 350°.
- In a Bowl combine the coconut oil, almond butter, and maple syrup then add bananas and mash. Add vanilla. Mix well.
- In a different bowl, combine all dry ingredients, add to the banana mixture and combine everything then add pecans. Pour the mixture into an (coconut) oiled bread pan use more nuts and chocolate for topping.
- Bake for 50-55 minutes until toothpick comes out clean.
